Imperial Oscietra Gold Caviar – Over 40 years of production expertise
It took a long time for sturgeon breeders to successfully cultivate Russian sturgeon (*Acipenser gueldenstaedtii*) capable of producing roe of a quality comparable to that of wild Oscietra. This highly sensitive, ancient bony fish demanded the full extent of marine biologists' expertise before it could adapt to controlled aquaculture environments. Today, the Russian sturgeon has become a truly adaptable, "cosmopolitan" fish.
Species-appropriate husbandry is crucial and guarantees top-tier, high-quality caviar. The sturgeon are raised in a vast, natural lake landscape. Thanks to clean water, ample space, and strict supervision, the Russian sturgeon grow to lengths of 80–140 cm and weights of up to 60 kg. After approximately nine years, the females reach sexual maturity and produce the precious roe used to create this caviar.
