Ingredients per 100g of caviar:

  • Sturgeon roe: 98.28g = 98.28%

  • Salt: 1.4g = 1.4%

  • Preservative: Borax E285: 0.32g = 0.32%

Reduced Salt Content for a Superior Caviar Experience

A low salt content has a distinctly positive effect on flavor. As a result, Cavian caviar retains its authentic taste and—thanks to its low salt content—truly lives up to the name "Malossol."

With a salt content of 1.4 percent, our caviar contains less salt than products from many other suppliers, which often have higher levels. Comparative tastings at our premises have confirmed this.

Compliance with Preservative Limits
In the food industry, the use of the additive Borax (E 285) for preserving sturgeon roe (caviar) is permitted under Annex 5 C L2 of the Additive Approval Ordinance of January 29, 1998, provided that the total maximum content of boric acid does not exceed 4g/kg. Our caviar contains 0.32% borax, a level below the legal limit.
