Watermelon · Horseradish · Dill

A light and elegant summer creation in which the natural sweetness of watermelon meets a subtle piquancy and the distinctive flavor of Oscietra caviar.

Preparation time: approx. 15 minutes

Servings: 4

Difficulty: Easy

The Recipe

As temperatures rise, light, fresh flavors are in order. The natural sweetness of watermelon meets a delicate horseradish cream and fresh dill, crowned by a generous quenelle of Oscietra caviar. The result is an elegant summer appetizer where freshness, creaminess, and the caviar’s subtle salinity combine for a harmonious taste experience.

Ingredients (servings 4)

½ small, ripe watermelon
150 g cottage cheese
1–2 tsp fresh horseradish
1 tbsp dill, finely chopped
1 tsp freshly squeezed lemon juice
Salt and freshly ground black pepper
Extra virgin olive oil
Approx. 50 g Oscietra caviar
Fresh dill sprigs for garnish

Preparation

Peel the watermelon and cut it into uniform squares, approximately 1 cm thick.

Stir the horseradish into the cottage cheese. Add the chopped dill and lemon juice, then season the cream to taste with salt and freshly ground pepper.

Arrange the watermelon pieces on a chilled serving platter and finish with a few drops of high-quality olive oil.

Next, spread the horseradish cream evenly over the watermelon pieces. Finally, place a generous quenelle of Oscietra caviar on each piece and garnish with delicate dill sprigs.

Serve immediately and enjoy well-chilled.

Our recommendation:

Our Oscietra caviar is particularly well-suited for this recipe. Its subtle taste of the sea, delicate texture, and balanced salinity enhance the freshness of the watermelon while creating an elegant contrast to the mild heat of the horseradish. An uncomplicated summer aperitif with exceptional sophistication—ideal as the start of a meal or as an exclusive treat on the terrace.
